This dish is packed with protein and rich in amino acids. Balance it with an accompanying brown rice or millet pilaf.
■ 1 ½ cups cooked red kidney beans, mashed
■ ½ cup pressure cooked brown rice
■ 1 small onion, chopped
■ 2 tsp parsley
■ 1 tbsp olive oil
■ Sea salt or rock salt and pepper to taste
■ Saute onions in 1 tbsp of olive oil. In a mixer, combine beans, brown rice, parsley, salt and pepper and sauteed onions.
■ Blend well, by pulsing the mixer and do not blend entirely, as this adds some character to the croquettes. Shape into croquettes.
■ Pan fry by smearing a little oil (preferably a high heat oil like Canola or Olive) on either side.
