The pre-Christmas sweet ritual

CHENNAI : Keeping up with the tradition before Christmas, Writer’s Cafe at Taramani organised its maiden cake mixing ceremony on Wednesday.About 100 kg of dry fruits and nuts were mixed in a matching proportion of alcohol by chefs, and others who attended the event. Cake mixing is a ritual before Christmas that follows a definite process of putting the elaborate ingredients together, mixing them and then waiting till the mixture is ready for baking.    

The mix comprised cashews, pistachios, almonds, raisins, peaches, apricots, prunes, walnuts, ginger chips orange peel and mixed fruit jam among other ingredients. Spices like cinnamon, nutmeg, clove and cardamon were also ground and used in the mix. They will be stored in airtight bags till next month in room temperature.

“Samples of the cake will be ready in Peters Road and Taramani by November 15. Visitors can start pre-booking from then. As it is the first time, there will only be one variety — the traditional Christmas plum cake,” said corporate chef, Karan Manavalan.

Business development manager, Tarun Mahadevan, added that all the income from cake sales will be donated to Foundation of Crime Prevention and Victim Care (PCVC) and other NGOs that Writer’s Cafe is associated with. “Also, we have started the sale of two types of Diwali gift boxes. While one includes different types of chocolates, the bigger one also has florentines, almond sticks and more.”
