Spaghetti is one of the popular Italian dishes and one can add variety to it by preparing it with different kind of sauces.

Chef Gaurav Gidwani, Mocha, shares few recipes of spaghetti in different sauce:

1. Spaghetti in Tomato Basil sauce

Ingredients:

- Olive oil (30 ml)
- Chopped onion (20 gram)
- Salt (to taste)
- Balsamic vinegar (2 teaspoon)
- Spaghetti pasta(boiled) (150 gram) 
- Tomatoes (500 gram)
- Sugar (2 teaspoons)
- Garlic (two portions of a garlic)
- Basil (10 gram)
- Black pepper (to taste

Method:
- Heat the olive oil in a pan over medium heat.
- Cook onion and garlic in a hot oil for about five minutes.
- Stir tomatoes, vinegar and sugar into the onion and garlic mixture. Bring to a boil, reduce heat to low, and simmer until the flavours blend to your liking.
- Stir basil into the sauce and season with salt and pepper.
- Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for eight minutes.
- Heat a pan and pour olive oil. Add 250 gram of Tomato basil sauce and simmer.
- Toss cooked pasta in the sauce.
- Serve garnished with chopped basil leaves.

2. Spaghetti in Arabbiata sauce

Ingredients:

- Olive oil (30 ml)
- Chopped garlic (20 gram)
- Tomato basil sauce (200 gram)
- Chilli flakes (3 gram)
- Crushed black pepper (1 gram)
- Sugar (5 gram)
- Vegetable stock (100 ml)
- Spaghetti pasta (boiled) (150 gram)
- Parmesan cheese (10 gram)
- Salt (to taste)

Method:

- Heat a clean pan and then add olive oil.
- Then add garlic and cook till it turns golden brown.
- Add tomato basil sauce and stock to the pan and cook for few minutes till they get combined and the mixture starts boiling.
- Then add boiled spaghetti and cook for seven to eight minutes.
- Add chilli flakes and check seasoning. 
- Pour on plate, garnish with parmesan cheese, parsley and serve.

3. Spaghetti in Napolitana sauce

- Ingredients:

- Olive oil (30 ml)
- Chopped garlic (20 gram)
- Tomato basil sauce ( 200 gram)
- Capers (10 gram)
- Crushed black pepper (1 gram)
- Sugar (5 gram)
- Vegetable stock (100 ml)
- Spaghetti pasta (150 gram)
- Parmesan cheese (10 gram)
- Black olives (15 gram)
- Salt (to taste)

Method:

- Heat a clean pan then add olive oil.
- Then add garlic and wait for it to turn golden brown.
- Add tomato basil sauce and stock to the pan and cook for few minutes till they get combined and the mixture starts boiling.
- Then add boiled spaghetti and cook for seven to eight minutes.
- In the end, add some sliced black olives and capers.
- Pour on a plate, garnish with parmesan cheese, chopped basil, sliced black olives and capers.

4. Spaghetti in Pomodoro sauce

Ingredients:

- Olive oil (30 ml)
- Chopped garlic (20 gram)
- Tomato basil sauce (200 gram)
- Salt (to taste)
- White pepper powder (1 pinch)
- Spaghetti pasta (150 gram)
- Fresh basil (5 gram)
- Parmesan (5 gram)
- Balsamic vinegar (2 tablespoons)
- Onions (50 gram)

Method:

- Bring a large pot of lightly salted water to a boil. 
- Add spaghetti and cook for eight minutes.
- Pour olive oil on a large deep skillet over high-heat. 
- Saute onions and garlic until they turn light brown. 
- Reduce heat to medium-high and add tomato basil sauce and balsamic vinegar.
- Simmer for about eight minutes.
- Stir in cooked pasta, tossing thoroughly with sauce. Simmer for about five more minutes and serve topped with grated cheese.
