Brown Rice & Quinoa Salad with Cooked Chickpea Humus Chickpea
Ingredients
● Brown rice boiled: 1 cup
● Quinoa boiled: 1 cup
● Cilantro: 3 tbsp
● Red onion finely chopped:
1 medium

For Dressing
● Vinegar white: 2 tbsp
● Olive oil: 1 tbsp
● Mustard powder: 1 tsp
● Brown sugar: 1 tsp
● Black pepper: 2 tsp
● Broccoli boiled: 1 cup
 
For Humus
● One cup chickpea cooked Indian-style
● Put in a blender with 1/3 cup olive oil and blend into a smooth paste
● Remove and empty in a serving bowl as an accompaniment with the salad
 
For Salad
● Mix all ingredients in a
serving bowl
● For dressing, mix the seasoning with vinegar, olive oil and sugar
● Mix well and drizzle over salad and mix well
● Serve chilled with the humus
