Pumpkin halwa navratri special

Ingredients

● Ripe orange pumpkin peeled
and grated: 1 large
● Brown sugar: 1 cup
● Desi ghee: 2 tablespoons
● Poppy seeds: 3 tablespoons
● Milk: 2 cups
● Jaggery: 1/2 cup
● Cinnamon: 2 sticks each 1-inch long
● Crushed cardamom: 8
● Slivered almonds: 10
● Raisins: 2 tablespoons

Method

● Grate the pumpkin, add sugar and keep for four hours
● Heat oil in a heavy bottom pan
● Add poppy seeds and saute till light brown
● Add the grated pumpkin
● Saute for 10 minutes
● Add the cardamom, almonds and cinnamon
● Add milk to this
● Stir for 30 minutes till the milk evaporates and the pumpkin is reduced to a smooth halwa and is browned a bit
● Serve hot
