Cooking Without Oil and Water

CHENNAI: Tovo restaurant recently introduced a new process, wherein 90 per cent of their dishes are cooked without oil and water. They call it the eight-way cooking process, which involves cooking food with its own moisture. Customers at the hotel will now be served food that is cooked in a process that ensures 98 per cent of the food’s moisture and flavours are retained. The food made by this process is tender and succulent, in comparison to the food made the conventional way, where more than 60 per cent of the moisture is lost. With this new technique of cooking, Tovo aims to reduce wastage.
