CHENNAI: It runs in the family — this fascination to dump an entire jar of pungent whole spices into the mix while cooking. My mom, can’t do without her spice jars, each filled with cardamom, elaichi, star anise, cumin, pepper, cinnamon, fennel seeds, red Kashmiri chillies and coriander seeds. She has her own signature piquant masala marinades for fish fry, chicken fry and even egg masala. This is one of my favourite recipes — especially since it was one of the many recipes she wrote in a notebook she gifted me when I entered matrimony.
