There’s only a few weeks more of the best of the mango season. So indulge your cravings with more than just the fruit. Chef Muthu Kumar at Novotel Hyderabad Convention Centre tells us how to whip up some delicious Mango Tiramisu. The recipe which serves eight takes about two hours to prepare.


Lady fingers

m  Castor sugar 65 gms

m Egg white 5 nos

m Yolk 5 nos

m Refined flour 125 gms

m Vanilla pod scrappings  1 pod


 Egg Yolk 3 nos

 Castor sugar 50 gms

 Vanilla pod scrapping 1 pod

 Cream (whipped) 250 ml

 Mascarpone Cheese 250 gms

Mango syrup

m Sugar 100 gms

m Water 100 ml

m Mango pulp 50 gms



Lady finger biscuit

m Whisk egg white and castor sugar till hard peak meringue is obtained.

m Cream the yolks and vanilla pod scrapping.

m Add to the meringue and fold in flour

m Pipe in the lined tray in shape of fingers and sprinkle with icing sugar

m Bake at 180 degree Celsius for 15 mins.

Tiramisu cream

l Make sabayon of egg yolk and castor sugar with vanilla bean scrapping, let cool

l Add mascarpone cheese and mix well.

l Add whiped cream and fold well.

Mango Syrup

l Mix all the ingredients together.

l Take a glass pipe in little bit of tiramisu cream.

l Place lady finger biscuit and soak it with Mango syrup.

l Then add tiramisu cream, repeat the process.

l Finish with tiramisu cream layer on top.

l Chill in refrigerator and garnish with fresh mango / mango sauce before serving.
