It’s  time to indulge in some lip smacking snacks. Rakesh Anand, Executive Sous Chef, The Westin Hyderabad Mindspace shares some recipes which are best relished during monsoon

Paan Jalebi

INGREDIENTS

  • FOR BATTER Ghee 500 gms

Refined flour 250 gms

Silver leaves 2 nos

Dry yeast 5 gms

Gulkand (Rose compote) 1 tbsp

Edible green colour little

  • SUGAR SYRUP

Granular Sugar 1 ltrs

Betel leaves (Shredded) 4 nos

Edible green colour little

Betel leaves essence 2 drops

METHOD

  • BATTER

Mix the yeast with 2 tbsp of warm water in a bowl and keep aside for few minutes.

Combine this yeast mixture with the refined flour in a bowl and mix well.

Add little water to make a thick batter and cover and keep aside for 30 minutes.

  • SUGAR SYRUP

Heat all the ingredients mentioned above to make a flavorful sugar syrup.

  • ASSEMBLING

Heat ghee in a swallow pan.

Pipe in the batter and form a coil shaped Jalebis.

Deep fry on both the sides.

Dip it in sugar syrup.

Strain the Jalebis, garnish with silver leaves and Gulkand.

Serve hot

Bharwan Paneer Pakoda

INGREDIENTS

Cottage cheese slices (roundels) 20 nos

Ghee 50 gms

Tomato ketchup 25 gms

Royal cumin 3 gms

Chili powder 5 gms

Blanched spinach (Chopped) 150 gms

Roasted cumin powder 10 gms

Spinach paste 15 gms

Garam masala powder 3 gms

Chat masala 10 gms

Roasted chick pea flour 10 gms

FOR BATTER

Ginger  chopped 15 gms

Water 250 ml

Green chilies chopped 3 nos

Refined  flour 100 gms

Salt to taste

Carom seeds 5 gms

Mashed potato 50 gms

Red chilly powder 5 gms

Turmeric powder 3 gms

METHOD

Marinate cottage roundels with salt, red chili powder, and ketchup. Keep them aside.

FOR STUFFING

On the other hand in a pan heat ghee on a slow flame add royal cumin as it crackles

Add chopped ginger and chopped green chilies sauté just for a minute

Add mashed potatoes, sauté for a while and add red chili powder, roasted cumin powder, garam masala powder, tomato ketchup, chat masala, chopped spinach and spinach puree, sauté. Take it off the flame.

On the other hand make a batter with water, refined flour, carom seeds, red chilly powder, turmeric powder and salt.

Now, take two roundels of cottage cheese together and stuffing in between (sandwich)

Dip these sandwiched roundels in the batter and deep fry it.

Sprinkle chat masala and serve hot.
