Candida Agna Rodriguez finds joy in baking theme-based cakes

KOCHI: Candida Agna Rodriguez, hailing from Kochi, had always looked up to her  mother who is an adept cook. She found inspiration, not to mention refined taste perception, from her mother’s delicious marble cakes and sponge cakes.

But, she happened to realise her penchant for the culinary art only when she baked a pink rosette cake for her grandma’s birthday two years back. Since  then, Candida has taken up the art of baking with full vigour. She  has made more than 100 homemade cakes by now which she markets through Facebook.

“At first I used to bake for my friends and family. Later, by word-of-mouth it spread to people outside my circle. Now, there are many customers,” says Candida.

Besides cakes, she is also into making cookies, cupcakes and chocolates. Candida’s cakes have an unique flavour and theme. Rainbow cakes, rossette cakes and mermaid cakes are all theme-based. But, it is Rich Chocolate Cake and Irish Vanilla Cake that are very much in demand. Irish Vanilla is her own make, a tasty combination of alcohol, coffee and fresh cream.

“I don’t compromise on the quality or taste of my cakes. I make sure that my customer are satisfied,” says Candida.

Candida also loves to improvise in her art. “I love to experiment so as to make new flavours and varieties,” she says. The prices of cake vary according to the quantity and rarity of the cake.

“Baking can be done by anyone. It’s just that you need a little interest and a lot of patience,” said Candida who dreams to open up a cake boutique in a year for Kochiites.
