VISAKHAPATNAM: Here is an opportunity for the food lovers of the city who are keen to relish the Chettinad cuisine.

Expert Chettinad chefs, Shanthi and Shanmughavalli will be serving mouth-watering dishes at the ongoing ‘Chettinad Food Festival’ at Gateway Hotel. The event was inaugurated on Friday and will continue till August 24.

“Authentic Chettinad food includes ingredients from South-East Asia that Chettiars had brought to India like star anise, a Chinese spice, red rice from Burma and fragrant spices like coriander, turmeric, cumin, pepper, fenugreek and cinnamon,” chef Shanti said. According to the chef, a complete Chettinad meal would have some sweetness, spice and sourness.

Unlike typical south Indian food, Chettinad food uses coconut oil sparingly and is not as spicy. The cuisine also uses sun-dried and salted vegetables, seeds and fruits to enhance flavour.

The masala is prepared by grinding the ingredients.

Gourmets who crave for appams and iddiappams on banana leaf with delicious Chettinad recipes can walk into the Gateway Hotel for a lavish buffet dinner in the evenings.

The dinner buffet costs `800 for adults and `450 for kids.
