CTFRI develops Omega-3 enriched ice cream

MYSURU: As a pioneering step in using ice cream as a vehicle to deliver quality nutrition, CSIR-CFTRI, in association with Olema Biosolutions, Bengaluru and Dairy Classic Ice Creams Pvt Ltd, has developed Omega-3 and Vitamin E-enriched ice creams. NITI Aayog CEO Amitabh Kant launched the new product on Tuesday.

A release from CFTRI said the new product ‘NurtiIce creams/frozen deserts’ have been found to have excellent sensory qualities.

Omega-3 fats and Vitamin-E are sensitive to heat and air thus needing precise science in its addition to other foods. Omega-3 fat is also found in fish and being from a non-vegetarian source it is not easily accepted addition to ice cream.

The innovative ice cream is developed using chia, a superfood having the highest content of Omega-3 fat from a vegetarian source.

CSIR-CFTRI has developed agrotechnology for chia and has shared the seeds to farmers across the nation. Farmers in Karnataka have successfully produced chia.
