BANGALORE: Shorba is one of the various kinds of soups or stews found in national cuisines across the Balkans, Eastern Europe, Central Asia, and the Middle East. This healthy soup recipe is easy to cook and is rich in nutrients. This recipe serves four.

Ingredients

  • Two table spoons of butter
  • Quarter cup onions
  • Two cloves
  • 1o peppercorns
  • One bayleaf
  • Half cup of almond paste
  • One-and-a-half table spoons of maida
  • 3 or 4 tea spoons of salt
  • 500 ml of milk
  • 500 ml of water/stock
  • Two table spoons of almond slivers

Method

Melt butter and add cloves, peppercorn and bayleaf. Sauté on low heat and add chopped onions. Sauté till they turn transparent. Now add maida and cook on a low heat till it becomes blonde in colour.

Add badam paste and sauté for two minutes. Now pour milk and water/stock and bring to a boil. Simmer for 10-12 minutes till it thickens. Check for seasoning. Strain and garnish with almond slivers. Serve hot.
