HYDERABAD : Achari Arbi Ingredients
8-10 Arbi | 1 Cup Beaten Fresh Yogurt | 2 Tomatoes, pureed | 2 Green Chillies, finely chopped | ~1 inch Ginger, grated | 1/2 Teaspoon Nigella Seeds | 1/2 Teaspoon Mustard Seeds | 1/2 Teaspoon Carom Seeds | 1/2 Teaspoon Fennel Seeds | 1/2 Teaspoon Cumin Seeds | 1/2 Teaspoon Fenugreek Seeds | 1 Pinch Asaefotida | 1/2 Teaspoon Turmeric Powder | 1/2 Teaspoon Red Chilli Powder | 1/2 Teaspoon Coriander Powder | 1/2 Cup Chopped Coriander | 1/2 Garam Masala | 1/4 Teaspoon Dry Mango Powder  | 3/4 Teaspoon Salt, or to taste | Oil to fry

Method
Wash the Arbi and boil them till they are softly done. Once the water settles down, take out the veggies and let them cool. Peel the skin meticulously. Remove the skin from the thick end and cut them lengthwise into two halves. Heat oil in a pan on medium heat. Add the slicesand fry them till light brown. To drain the excess oil put them on an absorbent paper. 


Heat oil in a pan and add the mustard seeds. When they start to crackle add cumin seeds, carom seeds, fennel seeds, fenugreek seeds, nigella seeds and a pinch of asfoetida. Now add the finely chopped green chillies, grated ginger and pureed tomatoes to the pan. Then add red chili powder, turmeric powder, coriander powder, garam masala, dry mango powder and salt according to taste. 

Add one cup beaten yogurt aand half cup water and cook on low heat for five minutes. Then add the fried Arbi slices. Remove from the flame and let it sit on the warm stove for 15 minutes. Add finely chopped coriander leaves to garnish the dish and serve hot with rice or bread of your chocie.

Arbi Bhooney

Ingredients:
Arabi - 500gm | Refined Oil - 200 ml | Red Chillies Whole - 15 | Salt to taste - | Coriander leaves - 20gm | Cumin seeds whole - 10gm | Black pepper Whole - 10 gm | Lemon - Two
Method:
Boil the arbi and peal it, then mash a little with hand | Then deep fry the arbi until it will become crispy | Take a mixer and grind all the ingredients roughly | Then a pan pour oil add the grinded masala and then add crispy fried arbi | Mix it well and then sprinkle with lemon juice and serve.
