Rolled-tortilla Dish

Ingredients

■ Corn cannoli 4 nos

■ Ricotta 100 grams

■ Ancho chilli 15 grams

■ Garlic 50 grams

■ Refined sunflower oil 50 ml

■ Basil leaf 10 grams

■ Peanut 100 grams

Chef’s spice

■ Mix all these ingredients together

■ Garlic powder 5 grams

■ Onion powder 5 grams

■ Chilli powder 5 grams

■ Oregano 5 grams

■ Cumin powder 5 grams

Salt 5 grams

Method

■ Fry chopped garlic in shallow fat and drain the oil

■ Mix fried garlic and ancho chilli powder in ricotta cheese

■ Using a piping bag fill in cannoli shells with the cheese mixture.

■ Shallow fry peanuts till golden, drain on paper towel, crush coarsely with a rolling pin and sprinkle with chef’s spice mix.

■ Serve flautas with spiced crushed peanuts

Garnished with fried basil.
