Learn the chemical properties and functions of milk and milk products in Dairy Chemistry

Since time immemorial milk has been included in our diet for good health. Studying Dairy Chemistry, you will explore the different sources of milk like cow, goat, buffalo, sheep and yak. Students who have a UG or have taken Chemistry, Biology and Zoology in Class XII can take up this course. The course will explore the chemistry of milk and milk products, their shelf-life, quality assurance, safety aspects, sanitation and hygiene of a dairy plant and brief overview of food chemistry.

■ Anand Agricultural University

The Dairy Chemistry Department is a constituent department of Sheth MC College of Dairy Science. The college was a constituent of the Univesity in the 1960s and then became a Faculty under Gujarat Agricultural University in 1972. They offer a BTech in the subject. You could also pursue research at the institute.

■ Karnataka Veterinary, Animal and Fisheries University

It offers an MSc in Dairy Chemistry through the Dairy Science College in Bangalore. Number of seats are limited to two for each in Msc and PhD in the Bangalore campus. Research is supported by the Indian Council of Agricultural Research, New Delhi.

■ National Dairy Research Institute

The institute offers a BTech, MTech and PhD in Dairy Chemistry. The institute conducts fundamental and applied research in milk and milk products. Some subjects you will study include Physical Chemistry of Milk, Food Chemistry, Chemistry of Milk Proteins, Advances in Chemistry of Functional Dairy Foods and Neutraceuticals and Advances in the Chemistry of Milk Processing.
