An egg salad that cracked the shell of a world record

A group of students from St Teresa’s College has created the longest salad, to encourage people to eat more eggs, finds Parvathi Benu

Salad might not be everyone’s favourite. But the students and faculty from the Home Science department of St Teresa’s College, Kochi love salads now, especially the ones with egg. Wonder why? An egg salad that they made earlier this month unofficially broke the Guiness record.

Prepared using 7000 eggs and 200 kgs of vegetables, the salad was 814.5 feet long while the salad that created a record previously was 625 feet long. 140 students, four faculty and a few chefs from the cafe Egg Stop came together to make this mammoth healthy mix, which was exhibited at the Ernakulam Marine Drive on October 9. “It was World Egg Day and we wanted to do something to create awareness on the nutritional value of egg and hence the idea of this salad was born,” says Dr Betty Issac, the head of the department. The students were given a day long training on salad preparation by Dr MA Babu, the founder of Egg Stop. On the day of the exhibition, it took the students less than an hour to assemble everything. They were more than excited. “It feels great that we could also educate people on the nutrition and creating a record is a big thing,” says Riya Philomina Benny, an MSc Food and Nutrition student.

The salad was displayed at the  ‘Haritholsavam’ event organised by Farmers Association of India. It was one of the major attraction to the people at the event. The students also distributed a part of it to the laborers at the venue.
They made special arrangements near the venue to cook the eggs and vegetables. “This was a perfect platform to create awareness about eggs. Nothing was capable to kill our enthusiasm,” says Riya. The initial aim was to create a 1000 ft long salad, but they had to give up the dream owing to the space crunch.
