Grilled aubergine with Basil vinegrette
Ingredients
● White vinegar: 1 tbsp
● Extra virgin olive oil:
7 tbsp
● Rock salt: 1 tsp
● Coarsely ground black pepper: 1 tsp
● Garlic cloves: 2-3
● Basil leaves: 25
● Seedless olives: 4-5
● Feta cheese: 2 tbsp
● Aubergine: 2 cut in roundels
Method
● Marinade the aubergines with oilve oil and seasoning, and set aside for 20 minutes
● Grill in preheated oven on both sides till little brown and cooked
● Remove from oven
● Meanwhile blend all other ingredients in a blender and liberally drizzle over the grilled aubergines and dot with feta
● Serve warm
Stir Fried Tuna with White Sesame
Ingredients
● Fresh tuna two small fillets
● Sesame seed: 1 cup
● Olive oil: 2 tbsp
● Garlic paste
● Cloves: 2
● Salt to taste
● Black pepper: 1/2 tsp
● Basil vinegrette recipe as in the recipe above
Method
● Rub salt black pepper olive oil and garlic paste on fillets, set aside for 15 minutes
● Dab with sesame seeds so fillets are completely coated
● Heat 2 tbsp olive oil in a pan and saute fillets on both sides till cooked
● Remove from heat, make slices and saute them on both sides again till lightly cooked
● Transfer to serving dish and drizzle the basil vinegrette and serve hot with mashed potatoes
