Ingredients
● Pineapple slices: 6
● Brown sugar: 1 tbsp
● Rock salt: 1 tsp
● Thai sweet sour sauce
● Rocket leaves: 2 cups
● Mixed nuts: 2 tbsp
Directions
● Place the pineapple slices in a pan and heat on low fire till slightly smoked to burnt
● In a separate pan, heat sugar till caramalised
● Add nuts and seasoning, stir for a minute and remove
● Let it cool and crystalise
● Crush the crystalised nuts and set aside for garnishing
● In a serving bowl, place the washed rocket leaves and drizzle the sauce over it
● Mix gently and add the burnt pineapple pieces, and garnish with caramelised nuts
● Serve chilled
Kafir Lime Couscous Salad
Ingredients
● Kafir lime leaves: 4-5
● Couscous boiled: 2 cups
● Chopped onion: 1
● Pine nuts: 2 tbsp
● Salt to taste
● Black pepper coarsely ground: 1 tsp
● Corn kernels: 4 tbsp
● Chopped tomatoes: 1
● Parsley: 1 tbsp
● Peanuts: 2 tbsp
● Coconut milk: 1/2 cup
Directions
● In a pan, heat coconut milk with kafir lime leaves and seasoning
● Remove and bring to room temperature
● In serving dish, put the couscous parsley, tomatoes, peanuts and nuts
● Pour the dressing over the couscous
● Serve chilled
