‘‘The purpose of the festival was to showcase the simplicity of traditional European cuisine and to highlight the usage of a classical dish like ‘crepes’ to churn out a complete meal. The unique combination of crepes stuffed with simple yet delicate preparation like scrambled egg and sevruga caviar is astonishing and classy,” says Chef Vishal Atreya, executive sous chef, at The Imperial New Delhi. The presentations have been kept simple to emphasise the subtleness of flavours and richness of rustic European food which was lost with time,’’ he says, adding that the festival will be a generous delight for palette.
