HYDERABAD: The royal spice zafran (saffron) has seen its way in Hyderabad with
restaurants in the city making special dishes with it. The secret spice used by the royal Mughals became available to the common people after India opened its trade to the world.
The expensive ingredient which can make all the difference to any dish with its distinct aroma, flavour gives slight golden colour to the dish and a noticeable fragrance. Paradise, known for its signature biryani is offering this royal dish to its joints, takeaways and restaurants.
The Zafrani Biryani has an exquisite taste as saffron is the key ingredient. The dish is prepared in traditional way with some changes.
The dish which is prepared in the old fashioned way with layers of basmati rice, meat and milk mixed with saffron is then put for dum to get that famous biryani which Hyderabad is known for.
“The dish is not spicy like the regular biryani but, is enough spicy for the denizens,” informed the corporate chef of Paradise Vijay Bakshi. The milk with the saffron reduces the heat of spices just enough to have the perfect blend of all the other ingredients used.
The dish is well balanced with all the right quantities of condiments.
“We always wanted to give this dish a special preference and release now instead of the Ramzan season as this was a long pending dish which we wanted to do since long,” added Bakshi on being asked if Ramzan could be the best season for such dishes.
The dish which is now being tested on a pilot run to see the feedback will be available for two months from February 1 – March 31. Biryani lovers can relish the special dish at all the Paradise outlets located across Hyderabad, Bengaluru and Vishakapatnam. The dish is available with mutton and chicken meat and is priced at `201 onwards.
