Savouring paladapayasam made of readymade mix is no longer a new thing for Malayalis. With many households preferring to avoid the lengthy process of cooking paladapayasam on the Thiruvonam day, readymade payasam has been serving the purpose for few years now. But for those who are not happy about packeted paladapayasam with preservatives, Amma Swasraya Sangham will deliver traditional homemade paladapayasam at their doorsteps before 10am on the festival day. Amma Swasraya Sangham is a team of 18 men from East Hill and they make the delicacy right from the scratch, starting with the making of ‘ada.’ “Cooking paladapayasam is a laborious effort. We make ‘ada’ the day before preparing payasam. We start by 9 in the morning and finish making ada by 3 in the evening. The quantity depends on the number of orders we get,” says Sharmal, a member of the Amma Swasraya Sangham. Only milk, sugar and saltless butter are used in the preparation, which will be completed around 3am on the day of Thiruvonam. “For 500 litre of payasam, we use 1,200 litre milk. The milk and butter are directly bought from Milma. We do not use any kind of artificial sweeteners or preservatives in the payasam,” explains Sharmal. Since the team prepares the payasam near East Hill, deliveries are limited to houses from East Hill upto Kakkuzhipalam area. Only orders above 1 litre are taken for home deliveries and the price is `170 per litre. They make an extra one litre just in case they get any last minute orders and take orders upto two days before Thiruvonam. Those residing outside their delivery limit can also come and purchase payasam from the Namboothiri Illam behind Pisharikavu Temple, where it will be prepared. The Amma Swasraya Sangham, which got orders for more than 600 litre payasam last year, hopes to break that record this year. The Young Brahmins Association is also quite famous for selling payasam on festive occasions. “We have been selling payasam for close to 15 years now. Our aim is to raise fund for our education scheme. We are yet to finalise the cost this year, it changes every year depending on the cost of milk,” said M J Sriram, president,Young Brahmins Association. The sales will be held at the Tali Brahmana Samooha Madam on Thiruvonam. Sales coupons are available in advance from the Madam. The Kerala Tourism Development Corporation is also set to organise Payasamela at Kidson Corner from Atham onwards. Favorites such as palada, palpayasam, ambalapuzha palpayasam and prathaman will be sold at the fest. Besides, them resident associations in the city will also be preparing payasam to be sold for Thiruvonam.
